Fat-Free Fruit Loaf
There are many recipes for this type of loaf – the secret is soaking the fruit overnight in the tea, so that it becomes really moist. This recipe only uses a mug as a measure, doesn’t matter what size – as long as you use the same one for all the ingredients.
This is very tasty spread with mashed banana or a little jam or marmalade.
Ingredients
For the Cake
2 mugs mixed fruit (raisins, sultanas, currants, cherries)
1 mug hot black tea
1 mug soft light brown sugar
2 mugs self-raising flour
1 egg
Method
Pre-heat the oven to 160 deg. C.
Soak the fruit in the tea overnight.
Mix in all the other ingredients and put into a greased and lined loaf tin. (may make 2 small ones depending on mug size)
Bake in the preheated oven for 1 ½ hours or until risen and light brown in colour.
